Using tomatoes as the main ingredient in a soup is no tough job, so it seems. But, once you get to the task, you begin to wonder just how much you can innovate and experiment to make something new out of a simple tomato soup recipe. Not a mean task for us, but a task done in a jiffy by Sanjeev Kapoor! Here are some innovative ways of making tomato soup by Sanjeev Kapoor straight from his kitchen.This palatable soup is an innovation of Sanjeev Kapoor. By roasting the tomatoes and garlic, he adds a new dimension to the already fragrant ingredients and gives it a more earthy touch.
Ingredients:
8 medium Tomatoes
1 Garlic
2 tablespoons Olive oil
1 medium sized Onion
1 Bay leaf
Salt to taste
2 sprigs fresh thyme (Ajwain ka Phool)
1/2 cup Tomato puree
10-12 Basil leaves (Tulsi)
Crushed black peppercorns
1 slice White bread
Basil oil to drizzle
The How-to:
Peel and chop the tomatoes and onion.
Next, slice the garlic bulb to get a thin slice. Take this slice in a bowl and add some salt and olive oil. Place this bowl in the oven on high heat till the garlic is brown.
Now, fry the onion, tomatoes, bay leaf and salt in a little olive oil. Add 2-3 cloves of garlic to this and then pour in some water.
To the water, add the entire remaining bulb of garlic and the thyme sprigs and allow the pan to boil.
After it is properly boiled, pour in the tomato puree, basil leaves and crushed pepper.
Allow the soup to cook till the tomatoes are cooked and soft.
Strain the mixture and remove the garlic bulb, and thyme sprigs. You will be left with some thin strained stock and a thick mixture.
Set the stock aside for later use.
Now blend the thick mixture, adding a little water if necessary. In the last whisk of the blender, add a slice of brown bread to the soup.
Lastly, take both the stock and puree in a pan and boil it.
Serve this unique tomato soup piping hot, garnished with basil leaves or basil oil.
