oday we’re gonna show you what our Sundays look like, and share Shay’s Simple Slow Cooker Beef Stew Recipe. Random, I know, but appropriate. Let’s go.
Our lives are very full. 5 kids, 2 jobs. Weeks fly by, faster all the time. And we’ve found the only way to feel like we’re making a decent effort at parenting et al is to get ahead of it.
My wife is very much a proponent of eating real food, and I’m eternally grateful for her firm stance. She was raised in a kitchen, and it’s her comfort place. And again, I’m grateful, because that room is not my strong suit.
So we’ve developed a wonderful pattern of spending Sundays prepping for the week ahead…shopping and cooking. Generally 3 stops: Costco (which we love), Walmart (which we tolerate, but also where I get to pick my moment to lay a big sloppy PDA on my beautiful wife in an attempt to shock the Walmart passersby), and Sprouts for actual green food, and lots of it.
Today a $190 Costco trip, which may or may not have included a $25 awesome jacket that made the wife smile. Score. She’s a medium. Note the disinterested passersby and the fire doors. We really thought this shot out.

Here’s today’s score. Again, it’s about a medium. Small to medium. For one week.

We organize, rotate week old untouched kale and celery, unpack our car-payment-sized grocery run, and get to work cooking, bagging, and freezing for use during the week.
Today’s list of accomplishments included 2 roasted chickens (get a roaster, they’re fantastic) and olive-oil baked brussel sprouts,

about 4 lbs of seasoned and grilled chicken for use in several recipes,

Jamie Oliver’s Hummus (which had WAY too much tahini in our humble opinion), chicken tortilla soup (yum), Shay’s world-class meatless chicken chili (recipe to come, and don’t turn your nose up at the word meatless, this chili is AMAZING),

and finally, Shay hauled out her Simple Slow Cooker Beef Stew Recipe, which we’re gonna share with you today.
We made a crapload of food today. But don’t kid yourself, we have two teenagers. We’ll be in a drive thru by Thursday.

Simple Slow Cooker Beef Stew Recipe
Simple Slow Cooker Beef Stew Recipe2 lbs cubed stew beef
baby carrots
celery
1 medium white onion diced
potatoes
2 envelopes beef stew seasoning (generic is fine)
4 beef bouillon cubes
6 cups water
Optional:
1 packet Lipton onion soup
2 Tbsp Worchestershire (extra points for saying this correctly) sauce
2 Tbsp red wine
Some of the veggies above don’t have quantities, and Shay’s reasoning for this is: Everyone likes what they like, and in different quantities. Peas also make a great addition, late in the cooking as they get mushy quick. But to figure out how much of each to use, pick your combination of bite-size potatoes, carrots, and celery, so that the final about is about 10 cups of veggies.

Now, timing. If you only have a shorter period of time and you can’t baby it, you can dump all this in together on high for 4 hours.
BUT. If you want to do this right, do this.
Load the cubed beef, bouillon, water, and onion into your crock pot. We love to put the optional stuff in at this time as well, the Lipton soup mix, the red wine and Worchestershire… it settles into the meat beautifully. Cook on high for 2 hours… the meat cooks better this way…super tender.
Yes, this is my crock pot. When I got it there was a crappy paper label on the front that I couldn’t get off. I got pissed off and left it. It stays there. On principle. To all manufacturers, spend the extra penny for a good quality label. Don’t be assh*les.

At the 2 hour mark add the rest of your veggies, and then cook on LOW for 4 more hours.

Keep an eye on the thickness of the liquid from here on out…If it looks like its thickening too much, add a half cup of water more. Dont add TOO much water though, because you could end of with soup at the end instead of stew. (BTW, if this happens, add a bit of flower to thicken it up…no worries.)
Serve with rolls and salad. Feeds about 8.
