There seems to be a theme when I talk with friends (especially bloggers) about new year’s resolutions this year: time management.

I know — what’s new, right?

But this year, I’m one of ‘em. I wrote about it a little bit in my post about choosing a “word” for the year instead of a resolution. But in a nutshell, my hope for these next few months is to figure out a plan for how to do less (meaning an actual 40 hour work week) in order to spend more time with the people in my life who I love. And also to sleep. I was guilty last year of getting way too little sleep, and frankly, it was ridiculous and I’m over it. And I happen to be quite fond of my pillow. And waking up after 7-8 hours of solid zzz’s.

One of the tools I’ve been working with the last month of so that has really helped with daily planning is this cool productivity schedule from Storyline. I especially love how it has you write out a “rest/reward” for the the biggest tasks you need to accomplish that day. After trying it out for a few weeks, I’ve noticed that (for better or worse) I am apparently a little more food-motivated than I thought. The prospect of a cup of my favorite hot tea or a trip to the coffee shop, a piece of chocolate after lunch, or even just a handful of blueberries are enough to get me plowing through a big project more quickly than usual. (Yes yes yes, I know that if food’s going to be the motivator, it needs to be at least mostly healthy.)

But I’ve also found that the prospect of having dinner ready to go after a workday is extra motivating, and really satisfying. So since I’ve been trying out the productivity schedule, I’ve also been trying out new slow cooker recipes as a bit of a motivator to finish the workday (and then stop working). And I’m loving it!!! I mean, who doesn’t love having your slow cooker prepare dinner for you? But especially while I’m in the zone of trying to plan ahead and be more intentional with the hours in my day, having a pot of something delicious cooking all day is pretty much just the best.

So as we’re continuing our healthy eating month on the blog, today I’m sharing another “skinny” recipe with you — my “Skinny” Slow Cooker Taco Soup.

Ok, I don’t know what lighting miracle happened, because I took these photos on the cloudiest, dreary day — which this soup was perfect for. But hey, go camera go. This taco soup was beautiful and delicious!!!

And it’s also super quick and easy to prepare.

All that you have to do to prep this soup is saute up a pound of ground turkey or chicken (or you can add in some shredded chicken instead, or omit the meat completely if you want to go vegetarian/vegan). Then dump in a bunch of cans of veggies and beans and seasonings. Then let the slow cooker do all of the work until it’s cooked and ready to serve.

Add on your favorite toppings (in moderation please, since this is “skinny”!). Then serve it and enjoy it, especially knowing that the quick preparation left you time to do more of the things you love. You’ve gotta love that. :)

Total Time: 4 hours, 15 minutes
Yield: About 8-10 servings
Ingredients

1 Tbsp. olive oil
1 lb. ground turkey or chicken
4 cups chicken or vegetable stock
1 small white onion, diced
1 (14.5 oz) can diced tomatoes
1 (14.5 oz) can crushed tomatoes
1 (14.5 oz) can Great Northern beans, rinsed and drained
1 (14.5 oz) can red kidney beans, rinsed and drained
1 (11 oz) can whole kernel corn
1 (4 oz) can diced green chiles
1 (2.25 oz) can sliced black olives, drained (optional)
2 Tbsp. taco seasoning (**see below for substitution**)
toppings: tortilla chips (strips or crushed), diced avocado, light sour cream, fresh cilantro, lime wedges
Method

Heat oil in a saute pan over medium high heat until shimmering. Add ground turkey (or chicken) and saute until browned, breaking up chunks and stirring with a long spoon frequently, about 4-6 minutes. Drain, then add the meat to the bottom of a slow cooker.

Add remaining ingredients (except the toppings) to the slow cooker, and stir to combine. Cover and cook on high heat for 4 hours or until the onions are soft and translucent. Season with salt and pepper if needed. Serve warm with desired toppings.

I always feel a little apprehensive when I post a recipe like this minestrone soup. It’s the type of dish I never make the same way twice, and the fear is that someone will watch and assume that this is my “official” version.

You don’t need a recipe for minestrone, just like you don’t need a recipe for a great sandwich, or an epic salad. To make minestrone soup precisely same way every time, using a very specific list of ingredients and amounts, is to trample on the soul of this Italian classic.


Having said all that, what if you happen to make it so incredibly delicious one time that you want to experience the exact same shuddering soupgasm in the future? That seems like a perfectly sound reason for why you should write down the recipe…except cooking food doesn’t work that way.

Your perception of how a recipe tastes involves so many factors above and far beyond the list of ingredients. Remember that time you made that super awesome whatever, and it was so perfect, and then you made it again, exactly the same way, but somehow it just didn’t taste as great? This is why.

Ingredients:
3 oz pancetta
2 tbsp olive oil
1 diced onion
1 cup diced celery
4 minced garlic cloves
4 cups chicken broth
1 (28-oz) can plum tomatoes, crushed fine
2 cups water, plus more as needed
salt and pepper to taste
1 tsp dried Italian herb blend (mine was thyme, oregano, rosemary, basil)
red pepper flakes to taste
1 cup freshly shucked cranberry beans (aka shelling beans)
2 or 3 cups chopped cabbage
1 (15-oz) can garbanzo beans, drained
1 bunch swiss chard, chopped
2/3 cup raw ditalini pasta
extra virgin olive oil, Parmigiano-Reggiano, and fresh Italian parsley to garnish the top.

As soon as the weather get’s cool, I start craving soup! It’s a tricky matter in my house because my husband is super picky about his soups. (Souper picky? No. Heather…just stop!) Broth based soups aren’t filling enough for him. Basically it needs to immediately clog your arteries to be acceptable. I want soup way too often to play that game, so I keep trying to find happy mediums. This is a great list!

This crowd-pleasing creamy tomato soup is super nutrient-dense, yummy, and easy to boot! (Notice the table full of children gobbling it down in the picture above?) When my family went Paleo I started replacing processed grains with sweet potatoes and starchy squashes. That’s all fine and good except I’m starting to get really tired of sweet potatoes. In search of alternate sides I have gone on a bit of soup kick.

I also wanted to find a way to get more bone broth in my diet, one of the big paleo superfoods. Bone broth is a great source of bio-available (easily absorbed and quickly-put-to-work-for-all-sorts-of-goodness-in-your-body) nutrients: minerals such as calcium, magnesium, phosphorus, silicon, and sulpher; amino acids proline and glycine (which according to Sarah Ballantyne are “necessary to heal blood vessels and tissues damaged by inflammation or infection” amongst many other things), collagen such as glucosamine (to support the health of joints, hair, skin, and nails); and gelatin to heal the wholes in your gut. 

In addition, the cooked tomatoes give you a good dose of the phytonutrient lycopene (demonstrated to reduce risk of cancer) as wells as vitamins A & C.

Paleo Creamy Tomato Basil Soup Recipe

Prep Time: 5 minutes; Cook time: 40 minutes; Serves 8-10

1 tbsp. coconut oil, fat, or ghee

1 c. chopped white onion

4 cloves garlic

2 28-ounce cans diced tomatoes

2 c. bone broth

1/4 c. roasted red pepper from a jar (or 1 freshly roasted red pepper)

1/4 tsp. salt

1/2 tsp. pepper (more or less to taste)

1/2 tsp. dried oregano

2 tbsp fresh basil

1 can full fat coconut milk

Melt coconut oil (or preferred cooking fat) over medium heat in a large stockpot. Saute onions and garlic until translucent. Add diced tomatoes (including juice), red pepper, and bone broth. Mix in salt, pepper, oregano and fresh basil and bring to a boil. Reduce heat and allow to simmer for 30 minutes. Remove from heat and blend using an immersion blender* or a canister blender (you may have to do it in batches, remembering that hot liquids expand in the blender). Return to pot and add coconut milk.  Mix well and serve hot.

I was just researching to see if this was, technically speaking, a cream of asparagus soup.

And by "researching" we all know I mean googling. Google is so the new Dewey Decimal.

What I uncovered in my search was two things. First, did you know that "cream of asparagus soup" doesn't even have it's own wikipedia page?! It's like it doesn't exist. Whoa. And second I learned that this probably isn't, technically speaking, a cream of asparagus soup. And that's because it doesn't start with a roux (it's like gravy, like when you start making baked macaroni and cheese). 

But I'm basing this on cream of mushroom's wikipedia page. So, not sure that's accurate. Different veggie. Different rules?

But this soup does seem creamy, whatever you call it. It's also hearty and substantial. And that's because (drum roll) I added a potato. Boom. Instant sustenance.
Making soup
Simple Asparagus Soup, serves two as a meal and four as a starter.

1 pound asparagus
1/3 yellow onion
2 cloves of garlic
1 small russet potato
1 tablespoon olive oil
1/2 tablespoon butter
3 cups vegetable (or chicken) broth
salt+pepper
a lemon
a little greek yogurt (or sour cream)
How to make asparagus soup
First chop up the asparagus (reserve about half of the tips), onion, garlic and potato (peel and wash it first). Prep work: check.

In a medium pot heat the olive oil and butter over medium heat. Cook the onion until just softened (2-3 minutes). Add in the garlic, asparagus and potato. Cook until the asparagus begins to turn bright green (3-4 minutes). Season with a little salt and pepper and then pour in the broth. Allow to simmer for 20 minutes or until the potatoes can be easily sliced through with a knife. Now use your immersion blender to blend everything up. Or you can work in batches and puree in a blender (but be careful when transferring hot liquids).

In a small pot filled with 2-3 cups water blanch the reserved asparagus heads until bright green and cooked through but still crunchy. Drain and reserve. To serve garnish with a big dollop of greek yogurt and a few of the cooked asparagus heads.

I highly recommend squeezing a little lemon juice over the top of the soup just before eating. I love how citrus can add just a little pop of flavor to veggies, salads and lots of soups. Yum! xo. Emma
